How to Make Sheet Pan Sausage and Peppers in the Oven

This easy recipe offers a generous helping of protein and vegetables. And provides even more nutrition when it's paired with healthy grains. The recipe calls for smoked sausage, bell peppers of any variety, baby red potatoes, olive oil, and some seasonings. 

It is so easy to customize, it's the family dinner idea that keeps on giving. You can shake up your sheet pan sausage and peppers with onions, sweet potatoes, tomatoes, or maybe even a tangy red sauce! Or, you can personalize this easy weeknight dinner with flavorful seasonings and how you dish it up. Serve it on a bed of brown rice or with a bowl of buttered pasta.

Cutting up the ingredients is the most work you will have to do for this recipe. Cut the sausage into angled coin slices. Keeping their thickness around an inch will help the sausage cook thoroughly, evenly, and at the same rate as the vegetables. Then, slice the bell peppers and dice the potatoes. You can peel them if you’d prefer, but leaving the skin adds some crispy deliciousness that you don’t want to miss out on. 

Once everything is sliced and diced, move it to the sheet pan and drizzle with olive oil.

Season the vegetables and sausage to your heart’s content! We’ve provided rough measurements for Italian seasoning and salt and pepper to keep things simple. But garlic, paprika, and likely any seasoning you like will pair wonderfully with this quick sheet pan meal. Once you have added all the seasonings you want, use a pair of tongs to toss and mix the ingredients together. Do this until the oil and seasoning coats everything evenly. Then, spread the ingredients into a level layer on the sheet pan.

Get ready for the best part! Besides actually eating it, that is… Put the sausage and peppers in the oven (and whatever other vegetables you’ve added) and let it cook for about 17 minutes. Then, stir the ingredients around to turn, and place them back in the oven for another 17-20 minutes. You’ll know it’s ready when the kitchen smells like a savory dream.

No more scouring the internet for quick dinner ideas to feed the family during the week. This sheet pan sausage and peppers recipe is easy to make and is ready in less than 45 minutes! Simply toss everything on a pan, slip it into the oven, and sit down to savor a stress-free weeknight dinner. 


Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Ingredients

  • 12 ounces smoked sausage, cut into coin slices
  • 1 ½ pounds baby red potatoes, diced
  • 2 bell peppers, sliced
  • 2 Tablespoons olive oil
  • 1 ½ Tablespoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon pepper

Directions

  1. Preheat the oven to 450°F. 
  2. Prepare ingredients: cut the sausage diagonally into coin slices about ½- inch thick, slice the bell peppers into long and thin strips, and dice the potatoes, leaving the skin on for more flavor. 
  3. Transfer ingredients to a sheet pan and drizzle generously with olive oil. Season with Italian seasoning and salt and pepper, and use tongs to mix, toss, and coat everything completely in the oil and seasoning. 
  4. Spread the ingredients in an even layer and place into the oven to cook for about 17 minutes. Stir the ingredients to prevent imbalanced cooking, and cook for another 18-20 minutes or until the vegetables are tender and edges begin to char. 
  5. Serve on a bed of rice and enjoy!
