Old Fashioned Southern Pimento Cheese

  • 2 cups cheddar cheese, shredded (sharp is recommended)
  • ½ cup Parmesan cheese, shredded
  • ½ cup diced pimentos
  • ¼ cup cream cheese (allow to reach room temperature)
  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ teaspoon garlic salt
  • Sprinkle of paprika, optional 


  1. Whip the room-temperature cream cheese until smooth.
  2. Stir in the mayonnaise, sour cream, and garlic salt to the whipped cream cheese and whip again until the new mixture is smooth and combined.
  3. Fold in the cheeses and peppers until well combined.
