How to Make Peach and Pepper Jelly From Scratch

It’s actually much easier than it sounds and requires hardly any ingredients! Most of these things you can pick up from your local grocery store or source from nearby farms through the Farmers Market. The fresher the ingredients, the better the flavor, so always opt for homegrown when possible!

For this recipe, you’ll need:

  • 3 pounds of peaches, peeled and pitted
  • 1 ¼  cup cider vinegar
  • 2  jalapeno peppers, chopped
  • 5 cups sugar
  • 1 pouch liquid pectin

Before you begin with the ingredients, make sure all of your tools and utensils are ready to go. Jellies and preserves may take a while to prepare, but they should be stored quickly. It’s best to have canning jars sterilized and ready prior to beginning any preparation or done during the early stages of this process! 

You’ll start by giving your peaches and peppers a nice wash to remove any lingering dirt or other residue before adding it to your jelly. Once clean, peel your peaches, remove the pits, and chop into workable pieces. These can range in size and don’t need to be in any specific shape, but try to keep them under 2 inches in any dimension. Place the peaches in a large pot.

Next, you’ll prepare the jalapenos similarly. Give them a nice bath, pat dry, and chop into workable pieces. You’ll place the jalapenos into the same pot with the peaches. If you love spicy food, feel free to leave the seeds in (it’s what gives the biggest kick), otherwise, remove the seeds prior to combining the two ingredients!

Once the main ingredients are ready, you’ll throw in your apple cider vinegar and place on the stove. Bring the ingredients to a boil and quickly reduce heat to a nice and steady simmer. Let simmer for at least 20 minutes to soften the peaches as much as possible and make them easier to work with. This will release a lot of the fragrance so you’ll get a good idea of the flavor you should be expecting with this unique jelly! 

After your jelly has had time to break down during its simmer-stage, remove from heat and use a potato masher to mash the ingredients down. This will add some delicious texture to your jelly! Be sure to set your mixture aside after mashing and let cool for 20-30 minutes before handling again.

Using a fine-mesh strainer or sieve, strain the jelly into a medium-sized bowl and discard the leftover solids. Place your strained mixture into a clean saucepan and add sugar. Give this new mixture a good stir and place over high heat to bring the jelly to a boil. This is the step that begins to give jelly its sticky texture, so it’s important to be stirring constantly to avoid sticking and burning. 

Once the mixture reaches a steady boil, quickly add pectin and continue to boil for another minute. Then, remove from heat and be ready to divide into canning jars. Using a ladle, divide jelly into jars leaving ¼ inch of space between the jelly and lid. Make sure rims and lids are clear of any jelly residue and place jars in a water bath to seal.

After they’ve spent the recommended amount of time (depending on the jar) in a water bath, allow the jars to cool and come down to room temperature by placing them on a towel-lined countertop for however long it takes for heat to dissipate. You can store the jelly in a cool, dark, and dry place and enjoy it in the future!

Ingredients

  • 3 pounds of peaches, peeled and pitted
  • 1 ¼  cup cider vinegar
  • 2  jalapeno peppers, chopped
  • 5 cups sugar

Directions

  1. Prepare sterilized (warmed) canning jars.
  2. In a large pot, add chopped peaches, chopped jalapenos, and vinegar. Bring to a boil, reduce heat and simmer for 20 minutes, or until peaches are soft. 
  3. Remove from heat and mash mixture with a potato masher. Let mixture cool for 20-30 minutes.
  4. Strain jelly through a fine-mesh sieve into a bowl and discard any leftover solids. In a clean saucepan, combine the peach liquid (there should be about 2 cups) with the sugar, and bring to a boil over high heat. Stir constantly.
  5. Quickly stir in pectin. Allow mixture to come to a rolling boil for 1 minute, then remove from heat.
  6. Ladle into hot, sterilized canning jars, leaving ¼ inch headspace. Clean rims and add lids.
  7. Process jars in a water bath for the recommended time for your altitude. Place processed jars on a towel-lined countertop and allow to cool to room temperature before adding labels. Store in a cool, dark place.
