Creamy Tortellini Soup with Italian Sausage

Don’t let the season slip away just yet!

Not before you can cozy up with this irresistibly savory fall soup, that is.  

This time of year, there’s something in the air, something warm and cozy, and that feels… like having a steaming bowl of a hearty harvest soup is the best thing to do. You feel it too, right? Right, that’s why you’re here! 

So if you’re ready to sit back, relax, and sip on a creamy blend of earthy, tangy, full-bodied flavors like rich garlic and tomato, sautéed onions, soft and cheesy tortellini, and meaty Italian sausage, keep reading! 

How to Make Creamy Tortellini Soup

To make this autumn-inspired soup, you will need a few ingredients handy. Ground Italian sausage like Jimmy Dean’s is typically made with a blend of Italian spices, which will help to bring out this soup’s down-to-earth aromas and flavors. Additionally, you will need one medium-sized onion, diced. We recommend yellow, but different varieties will bring out different flavors, so don’t be afraid to try something new. You also need fresh arugula and garlic, as well. 

Aside from these things, the recipe calls for a creamy tomato sauce like Contadina, heavy cream, and pre-made tortellini. We are using Buitoni Three Cheese Tortellini for this recipe because the mixture of ricotta, parmesan, and Romano cheese adds a perfectly buttery edge to this creamy harvest soup.

After you have gathered all the ingredients you need and prepped all the produce, it’s time to get cookin’! Add a few Tablespoons of olive or vegetable oil to a large pot and warm it over medium-high heat. Add the Italian sausage to the oil and cook until it is browned, which should take less than 10 minutes. Be sure to stir and break up the sausage as it cooks.

Next, pour in the diced onion and minced garlic. Stir to mix with the sausage and sauté everything until the onion and garlic become fragrant, tender, and nearly translucent. Give it a dash of salt and pepper, too!

After the garlic and onion are softened, mix in the tomato sauce. You don’t want the sauce to start bubbling uncontrollably, especially since tomato sauce has a tendency to stain, so reduce heat and stir frequently. Allow everything to simmer for around 5 minutes.

The next step is to add the tortellini to the sauce. As it cooks, stir the pasta to ensure it cooks evenly. Do this for 10 minutes.

Then, stir in the heavy cream until mixed. If the soup is too thick for your liking, add a bit of vegetable broth or water. If you prefer a thicker soup, you can always add a few extra splashes of heavy cream, too.

Pour in the fresh arugula and stir into the soup until it wilts and reduces in size.

Then, you are ready to add the final touches and serve.

Sprinkle with red pepper flakes or toss in a bunch of fresh parsley and enjoy!

Table & Thyme’s Creamy Tortellini Soup Recipe

This soup is made with cheesy tortellini, creamy tomato, simmered garlic and onions, and savory Italian sausage, with warming comfort in every bite.  


  • ½ pound Italian sausage, ground
  • ½ cup onion, diced
  • 1 Tablespoon garlic, minced
  • 3 cups tomato sauce
  • 1 package cheese tortellini
  • ½ cup heavy cream 
  • 1 ½ cups arugula
  • Salt and pepper to taste


  1. Warm a few Tablespoons of olive or vegetable oil over medium-high heat in a large pot. Add the sausage and cook for 5-10 minutes, stirring until brown. 
  2. Mix in the diced onion and minced garlic and sauté for 2-5 minutes. Sprinkle with salt and pepper, add the tomato sauce and reduce the heat, letting everything simmer for at least 5 minutes. 
  3. Pour on the tortellini, stirring and cooking for an additional 10 minutes. Add the heavy cream. If the soup becomes too thick, adding vegetable broth or water can help to thin it back out. 
  4. Next, add the arugula to the pot. Stir into the soup until it wilts. 
  5. Garnish with fresh parsley and red pepper flakes and enjoy!
