Morning Sips
Dirty Chai
Cook time: 10 min
Ingredients:
- 2 chai tea bags
- 1 cup boiling water
- 1 tsp honey
- 1 shot espresso, cooled
- ⅓ cup milk of choice
Instructions:
- Steep the tea bags in the boiling water for about 5 min.
- Add the honey and stir, then let cool. Pour the cooled espresso into the cooled tea.
- Fill two glasses with ice. Pour equal amounts of the tea mixture into the glasses, then top with milk.
Banana Cream Cold Foam
Cook time: 3 min
Ingredients:
- 1 banana
- 120 ml milk of choice
- Ice
Instructions:
- Put all ingredients in a blender, and blend until smooth.
- If you like it sweeter, you can add a teaspoon of maple syrup.
- Once blended, pour on top of your coffee.
Iced Brown Sugar Latte
Cook Time: 5 min
Ingredients:
- 1 tsp brown sugar
- Espresso
- Milk of choice
Instructions:
- Scoop one tsp of brown sugar into a glass. Prep and pull a double espresso shot, then pour it over the brown sugar and stir.
- Add a handful of ice, and stir again.
- Fill the glass with ice, then pour your milk of choice to the top of the glass. Stir, and enjoy!
Coconut Vanilla Cold Foam
Cook time: 2 min
Ingredients:
- ¼ cup whipping cream
- 2 Tbsp full-fat coconut milk
- 1 tsp maple syrup (or to taste)
- ¼ tsp vanilla
Instructions:
- Add all ingredients to a glass, and froth for about 20 seconds, or until thickened and fluffy.
- Pour over your favorite cold brew, iced coffee, or latte.
Breakfast Sweets
Baked Apple Oatmeal
Cook time: 1 hour 15 min
Ingredients:
- 3 Tbsp olive oil
- 2 cups rolled oats
- 1 tsp baking powder
- ½ tsp cinnamon
- ¼ tsp salt
- 3 large eggs
- 1 cup applesauce
- ¾ cup milk
- ¼ cup maple syrup
- 2 tsp grated ginger
- 2 tsp vanilla extract
- ½ cup chopped pecans
- 2 cups chopped Gala apples
Instructions:
- Heat your oven to 375°F. Lightly spray your baking dish with oil. In a bowl, stir together the oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk eggs until well beaten.
- Add the applesauce, milk, maple syrup, ginger, vanilla and oil and whisk until combined.
- Add the dry ingredients to the wet ingredients and stir until mixed.
- Fold in the apples and pecans, then spread the oatmeal in your pan in an even layer.
- Top with more pecans, then bake 45 to 55 minutes or until the edges brown.
Blueberry Muffins
Cook time: 45 min
Ingredients:
- ½ cup butter, room temp
- 1¼ cups sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- ½ tsp salt
- 2 tsp baking powder
- ½ cup milk
- 2 cups blueberries
- Extra sugar for finishing
Instructions:
- Preheat your oven to 375°.
- Put the butter and sugar into a bowl, and using a mixer, cream until light. Add the eggs and mix until incorporated, then add the vanilla and mix once more.
- Sift the flour, salt, and baking powder into a bowl. Add half of the flour mixture to the butter mixture and stir until combined, then add half the milk and stir until combined. Repeat with the remaining flour and milk.
- Crush ½ cup of the blueberries with a fork, then mix into the batter. Fold in the rest of the blueberries.
- Line a muffin tin with cupcake liners, then fill to the top with batter. Sprinkle the extra sugar over the tops of the muffins, then bake for 30-35 minutes or until golden.
Vanilla Latte Pancakes
Cook time: 25 min
Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 large egg
- 1 cup buttermilk
- 1 Tbsp espresso powder
- 2 Tbsp sugar
- 2 tsp vanilla
Instructions:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and espresso powder. In a separate bowl, whisk the buttermilk, vanilla, and egg until well combined.
- Add the wet ingredients to the dry ingredients and whisk until just combined—there should still be a few lumps in the batter.
- Melt a pat of butter in a nonstick pan over medium heat. Add about ¼ cup of batter to the pan, and flip once the edges are set and bubbles form. Once both sides are cooked, set aside and repeat with the remaining batter.
- Serve with maple syrup.
Overnight Oats
Cook time: 8 hours
Ingredients:
- ½ cup rolled oats
- 1 tsp maple syrup
- ½ cup milk of choice
- 1 Tbsp plain Greek yogurt
- A pinch of salt
Instructions:
- Combine all ingredients in a container and mix. Cover and refrigerate overnight.
- Top with your choice of toppings—jam, nuts, peanut butter, fruit, etc.
Double Chocolate Banana Muffins
Cook time: 25 min
Ingredients:
- 1 large very ripe banana
- ¼ cup sugar
- 2 Tbsp oil
- 1 large egg
- ½ tsp vanilla
- ½ cup flour
- ¼ cup cocoa powder
- 1 tsp baking soda
- ¼ tsp salt
- ¼ cup white chocolate chips
Instructions:
- Preheat the oven to 350º. Grease 6 cups of a muffin tin with butter or oil. In a large bowl, mash the banana until smooth, leaving no lumps.
- Whisk in the sugar, oil, egg and vanilla extract until well combined. Add the flour, cocoa powder, baking soda, and salt, then stir until well-combined. Stir in the white chocolate chips.
- Divide the batter between the muffin cups evenly, and bake for 18 minutes, or until the muffins spring back when pressed gently on the top.
Dutch Baby
Cook time: 20 min
Ingredients:
- 1 large egg
- ¼ cup milk
- ¼ tsp vanilla extract
- ¼ cup all-purpose flour
- Pinch of salt
- 2 tsp butter
Instructions:
- Put a 5 or 6 inch cast iron skillet in your oven and preheat to 475º. While the oven is preheating, put the egg, milk, vanilla, flour, and salt into a blender. Blend until well combined, then let rest for 10 minutes.
- Once the oven is preheated, remove the skillet and add the butter. Swirl it around until melted, then pour the batter into the skillet and give it another swirl. Bake for 10 minutes or until puffed and golden.
- Serve with toppings of your choice.
Yogurt with Citrus, Blueberries, and Maple Syrup
Cook time: 5 min
Ingredients:
- Plain yogurt
- 1 cara cara orange
- 1 handful of blueberries
- Crushed pistachios
- 1-2 tsp maple syrup
Instructions:
- Scoop plain yogurt into a bowl. Cut and segment your orange, placing the segments on the yogurt.
- Add a handful of blueberries and crushed pistachios.
- Drizzle with maple syrup.
Savory Brunch
Sweet & Spicy Cottage Cheese Toast
Cook time: 5 min
Ingredients:
- 1 slice of bread, toasted
- ¼ cup cottage cheese
- Chili crisp, to taste
- Honey, to taste
Instructions:
- Spread the cottage cheese over your toasted bread.
- Add as much chili crisp as desired, swirling it into the cottage cheese for even coverage.
- Drizzle with honey, and serve.
Breakfast Tacos
Cook time: 15 min
Ingredients:
- 1 strip of bacon
- 1 diced mini bell pepper
- 1 Tbsp diced onion
- 2 eggs
- 2 corn tortillas
- Avocado
Instructions:
- Cook the bacon in the pan until crispy. Remove from the pan, but leave the bacon fat.
- Add the bell pepper and onion to the pan, and cook until softened, 3-4 min. While it’s cooking, cut the bacon strip into pieces.
- Whisk 2 eggs in a small bowl. When the peppers and onions are ready, pour the eggs into the pan.
- Add the bacon to the egg mixture. Stir gently to scramble. Once cooked through, divide the egg mixture between two corn tortillas.
- Top with avocado slices.
3-Minute Eggs
Cook time: 3 min
Ingredients:
- 2 eggs
- Cheese of choice
- 1 Tbsp milk or heavy cream
Instructions:
- Crack two eggs into a ramekin. Top with shredded cheese and sprinkle with milk.
- Microwave for 1-2 min or until the eggs are set to your preference.
- Feel free to get creative and add mix-ins like peppers, spinach, herbs, and more!
Hashbrown Casserole
Cook time: 1 hour
Ingredients:
- 40 oz frozen hashbrowns, thawed
- ½ cup (1 stick) unsalted butter, melted
- 10 oz heavy cream
- 1.5 tsp chicken bouillon
- 16 oz sour cream
- ½ cup green onion, thinly sliced
- 2 cups shredded cheese (we used cheddar and Parmesan)
- 1 tsp salt
- ½ tsp pepper
Instructions:
- Preheat your oven to 375°. Mix all ingredients in a large bowl, then transfer the mixture to a lightly greased baking dish.
- Smooth the top, then bake for 35-40 min. Next, broil until the top is golden, about 10 min.
- Serve topped with more green onion.
