Smoky andouille sausage, a rich, garlicky Parmesan sauce, and perfectly cooked pasta come together in a dish that’s both indulgent and incredibly easy to make. A dash of Cajun seasoning adds just the right amount of heat, while butter and heavy cream create an irresistibly smooth finish. Whether it’s a busy weeknight or you’re just in the mood for something satisfying, this recipe is sure to hit the spot!
Ingredients
1 tbsp oil
12 oz. chicken Cajun andouille sausage, cut into 1/2″ slices
Salt
1 lb penne
2 tbsp unsalted butter, divided
1 1/2 cups chicken broth
3 cloves garlic, minced
1 tbsp tomato paste
2 tbsp Cajun seasoning
1 1/2 cups heavy cream
2 cups grated Parmesan
Fresh parsley, for garnish
Instructions
Cook Time: 20 Minutes
Heat the oil in a pan over medium heat. Cook the sausage, tossing occasionally, until browned, 3 to 4 minutes per side. Set the cooked sausage aside.
In a large pot of boiling salted water, cook the pasta until al dente, about 2 minutes less than the package directions. Reserve 1/2 cup pasta water before draining.
In the same pan, combine 1 tablespoon of butter and a splash of chicken broth over medium-high heat. Cook, scraping browned sausage bits from the bottom of the pan, until butter is melted.
Add the garlic and tomato paste and cook until fragrant, about 1 minute. Add the Cajun seasoning and the rest of the chicken broth. Cook, stirring, until combined.
Slowly whisk in the heavy cream and bring to a boil. Reduce the heat to medium-low and reduce it to a simmer.
Add the parmesan slowly while whisking, and simmer until the sauce is slightly thickened and reduced by about one-third. Add the last tablespoon of butter and whisk until it’s melted.
Add the cooked pasta to the pan and toss, adding splashes of pasta water as needed, until the pasta is covered in sauce and the sauce is glossy and smooth.
Add the sausage to the pan and top with parsley and more Parmesan if desired.
