In order to make this recipe, you’ll only need a handful of essential ingredients such as butter, flour, sugar, oats, and raisins, as well as a few more things. Otherwise, you have complete freedom to mix and match different ingredients to achieve that perfect cookie. Maybe a hint of cinnamon or a dash of nutmeg? Maybe a sprinkle of allspice or a pinch of pumpkin spice? The possibilities are truly endless!
As your oven is preheating, that’s the perfect time to whip up your cookie batter! First, you’ll want to start by beating your butter in a large bowl. You’ll get the best results with butter that’s room temperature as opposed to fresh out of the fridge since you’ll be able to see the right sized peaks after only about two minutes of beating.
Next, combine both the brown and white sugars in the butter and continue to beat for another two minutes or so.
At this point, you’re hoping to create a granular paste similar to the picture below!
The next step is to add in a few eggs and some vanilla. Just like before, you’re going to beat the ingredients until the mix into the already-formed pasted evenly.
At this point, you’ll have some remaining dry ingredients. In a separate bowl, combine flour, baking soda, salt, and rolled oats and mix until well combined. Once you’re got the dry mixture set, slowly mix it into the bowl of wet ingredients and mix using a spoon or rubber spatula. This step works best if you work the dry mixture in three segments.
Finally, it’s time to add the main event: raisins! Simply stir in the raisins until they are evenly distributed in your cookie batter!
Using a small ice cream scoop or a spoon, scoop out small balls of dough and place of a parchment lined-baking sheet. Try to keep at least an inch of space free on all sides of the dough balls because the cookies will need room to expand without running into each other.
Bake the cookies for 11-13 minutes and pay attention to their color! Try to avoid letting your cookies brown and remove them when they still look a bit tender in the center.
