Summer may be winding down, but that doesn’t mean the fun has to!
Beat the heat with the help of some fun mixed drinks and fruity summer cocktails!
With a little more than half of the season behind us, it’s time to make the most out of the summer we have left! Whether it’s a beach day with the fam or an afternoon lounging by the pool with friends, having a delicious and refreshing drink in hand is a key ingredient for a day well-spent. It can’t just be any drink, though, it’s got to be one that’s cool enough to chill you out and have just enough pizzaz to keep things fresh. At Table & Thyme, we’re always on the lookout for easy-to-make recipes that shine, which is why we are so excited to share what we have found! Here are our 8 must-try mixed drinks and summer cocktails to try before the end of the season!
1. Mézcal Coconut Paloma
Enjoy the magic of chili lime in this refreshingly fruity mixed drink, guaranteed to spice up your summer plans!
Ingredients
- 1 Tablespoon salt
- ¼ teaspoon chili powder

2 ounces Mézcal
- 2 ounces grapefruit juice, freshly squeezed
- 1 ounce honey syrup

1 can coconut LaCroix
- 1 lime
Directions
- Prepare the glass by mixing the salt and chili powder together on a plate and cutting a lime into wedges. Coat the rim of the glass with a lime wedge and dip the rim into the chili powder-salt mixture. Rotate the glass to cover the entire rim and fill the glass with crushed ice.
- In a separate glass, combine the grapefruit juice, honey syrup, and mézcal. Mix the ingredients well before pouring over the crushed ice.
- Top off the glass with coconut LaCroix and a lime wedge on the rim. Serve and enjoy!
2. Frozen Mango Mézcal Margarita
Kick back and relax by spending an afternoon poolside with a tangy frozen mango margarita in hand!
Ingredients
- 1 medium honey mango
- Juice from ½ lime
- 1 Tablespoon simple syrup

2 shots Mézcal
- Handful of ice
- Hot sauce of choice
- Aleppo pepper, tajin, or another seasoning of your choice.
Directions
- In a blender, combine the mango, lime juice, simple syrup, mézcal, and ice and blend completely.
- Spread a small amount of hot sauce on a plate and coat the rim of a glass by rotating it in the hot sauce. Then, sprinkle a pepper seasoning of your choice on a second plate and repeat to coat the hot-sauce-covered rim.
- Pour the mango margarita into the glass and enjoy!
3. Mint Julep
A Southern summertime classic, this mixed drink is the ultimate refresher!
Ingredients
- 4-5 mint leaves, fresh
- ½ ounce simple syrup

2 ½ ounces bourbon whiskey
- Crushed ice
Directions
- Place your mint leaves in the bottom of a glass and top with sugar cubes or simple syrup.
- Using a muddler or the back end of a spoon, mash the mint leaves into the sugar to release the oils.
- Pour the bourbon whiskey into the mixture, then add crushed ice to the top of the glass.
- Top with a fresh mint sprig and enjoy!
4. Limeade
A tangy treat to keep you on your toes, this limeade is a great kid-friendly drink for any summertime activity!
Ingredients
- ½ cup sugar
- 1 cup warm water
- 1 cup lime juice
- 3 cups cold water
Directions
- In a pitcher, combine the sugar and warm water and stir until the sugar is fully dissolved.
- Stir in the lime juice as well as the remaining cold water.
- Serve over ice and enjoy!
5. Peach Tea
If the sweetness of summer was a drink, it would be this peach tea!
Ingredients
- 1 cup water
- 1 cup sugar
- 2-3 peaches
Directions
- Rinse and dry the peaches before slicing and placing them into a medium-sized pot filled with water and sugar.
- Bring the pot to a boil and allow the sugar to dissolve before turning off the heat.
- Using a mixing spoon, press the softened peach slices against the sides of the pot and crush them. Then, cover and let sit for 20-30 minutes. Prepare the iced tea as the peaches are sitting.
- Strain the peach syrup into a container and set it aside.
- Fill a cup with ice and pour in the iced tea. Add about one ounce of the peach simple syrup (or to taste), stir, and enjoy!
6. Watermelon Agua Fresca
Tropical paradise in a cup, this alcohol-free mixed drink is the perfect addition to a relaxing summer afternoon!
Ingredients
- 1 pound watermelon fruit
- 2 Tablespoons lime juice
- A pinch of salt
Directions
- Blend all of the ingredients together until the watermelon is completely broken down.
- Strain and enjoy!
7. Coconut Cream Soda
This creamy coconut soda is so tasty, that you’ll feel just as bubbly as the drink in your cup!

- Vigorously shake your can of coconut milk for about a minute to prevent separation.
- Fill a glass with crushed ice and pour in the coconut LaCroix, leaving about 1.5 inches of space at the top. Top it off with coconut milk, stir, and enjoy!
8. Creamy Lemonade
Tangy, classic lemonade but with a fun twist, this recipe is bound to be a new summertime staple!
Ingredients
- 2 lemons
- 1/2 cup whipping cream
- 1/4 cup sugar
- 2 cups water
Directions
- Wash your lemons and cut them into quarters. Put them in a blender with 1/4 cup sugar and 2 cups of water, and blend until smooth.
- Pour the mixture through a strainer to separate the solids.
- Rinse your blender, then pour the remaining liquid back into it. Add 1/2 cup whipping cream. Blend for 20-30 more seconds.
- Pour over ice and enjoy!
