While easy to make on a busy weeknight, these Crispy Salmon Bites are fancy enough to serve at a party. Sriracha, garlic, ginger, soy sauce, brown sugar and red pepper flakes mix together to make the perfect marinade for the salmon in this recipe. Put this recipe in your back pocket to serve during the holidays for an impressive meal!

Ingredients:
Season the cubed salmon with salt and paprika, then set aside.
In a bowl, combine garlic, ginger, soy sauce, brown sugar, red pepper flakes, and sriracha sauce.
Place the salmon in a separate bowl and pour three-quarters of the marinade over it. Reserve the remaining quarter for dipping. Allow the salmon to marinate for at least 4 hours, or overnight if possible.
Heat a pan over medium heat. Fry the marinated salmon cubes for about 3-4 minutes on each side until golden brown and fully cooked. Remove from heat.
Soften rice paper halves by dipping it in warm water. Place two salmon cubes, a slice of jalapeño, and a small wedge of avocado on the rice paper. Fold in both sides of the rice paper and roll it up tightly to enclose the filling.
Heat 2 tablespoons of olive oil in a pan over medium heat. Add the wrapped bites in a single layer without overcrowding the pan. Fry each side for about 3-4 minutes until crispy and brown.
Serve the salmon bites hot with the reserved marinade as a dipping sauce.
