Instructions:
Heat up a pan over medium with some olive oil and cook the Cruciferous Crunch mix until it’s wilted. Add sliced chicken sausage and cook until the sausage is browned. Remove the mix from the pan, and cook the gnocchi according to the package. Once it’s done, add the sausage and veggie mixture back to the pan, and mix until everything is combined.
Crispy Air Fryer Corn
Cook time: 20 min
Ingredients:
1 can sweet corn
Pinch of salt
Paprika to taste
Instructions:
Add a can of drained sweetcorn to your air-fryer and cover in salt and paprika to taste. Mix it together and cook for 15-20 mins at 350º or until golden and crispy. Check the corn as it cooks to make sure it doesn’t burn.
Set the oven to 400º. Start by chopping the potatoes and broccoli. Slice the chicken sausage.
Toss the chopped potatoes and carrots with 2 Tbsp olive oil, 1 tsp garlic powder, 1 tsp onion powder, the paprika, salt and pepper. Spread on a large sheet pan. Roast for 20 minutes, mixing halfway through.
While the potatoes are roasting, mix the chopped broccoli with 1 Tbsp olive oil, ½ tsp garlic powder, ½ tsp onion powder, salt, and pepper.
Remove the sheet pan from the oven. Move the potatoes & carrots to one side and spread the broccoli on the other side. Roast for 10 minutes.
Remove the pan again, make room, and add the sliced chicken sausage. Roast for 20 minutes, mixing halfway through.
Remove the pan once again and add the maple syrup to the broccoli, potatoes and carrot. Add more salt & pepper as needed. Mix everything and roast for the last 10 minutes.
½ cup full-fat coconut milk, soy cream, or heavy cream
½ cup vegetable stock, plus more as needed
Instructions:
Heat the oven to 480°F.
Drizzle some oil into a deep baking dish. Add in the onion, garlic (cut side down), basil and thyme, chile, and tomatoes. Drizzle more olive oil on top, plus a big sprinkle of salt and pepper. Bake for 25 to 35 minutes, until the tomatoes are slightly charred.
Let cool for 5 to 7 minutes. Remove and discard the thyme. Add the rest of the ingredients to a blender, along with the coconut milk and vegetable stock. Remove the little plug from the blender lid, then cover the lid with a kitchen towel and blend until smooth. Taste and adjust the salt and pepper if needed.
Serve with a piece of buttered toast or a grilled cheese sandwich.
