When the grocery store is closed or the roads aren’t worth braving, it’s easy to assume dinner will be boring or thrown together without much thought. But some of the most comforting, satisfying meals come from exactly these moments, when you work with what you already have.
Pantry-driven cooking is about more than convenience. It’s about creativity, comfort, and making something intentional out of simple staples. A can of beans, a box of pasta, or a jar tucked in the back of the cabinet can turn into a meal that feels warm, familiar, and even a little special. This collection of recipes is designed for those days when leaving the house isn’t an option and honestly, when you don’t want it to be. Easy Granola
Cook Time: 1 Hour 10 Minutes
Ingredients:
- 2 cups rolled oats
- ¼ cup nuts
- ¼ cup dried fruit
- ¼ cup brown sugar
- ¼ cup honey
- 3 tbsp coconut oil (or olive oil)
- ¼ tsp cinnamon
- ⅛ tsp salt
Instructions:
- Preheat your oven to 250° and line a baking sheet with parchment paper.
- Add oats, nuts, and dried fruit to a large bowl. In a microwave-safe bowl, add honey, brown sugar, and oil. Microwave for 30 sec and stir until the sugar has dissolved and the mixture is well combined. If sugar won’t dissolve, microwave for another 15 sec and stir.
- Pour the honey mixture over the oat mixture. Add the cinnamon and salt. Stir until the oats are fully coated in the honey mixture.
- Spread the oats in an even layer on the baking sheet. Bake for 1 hour, stirring every 15 min.
- Store in an airtight container for up to one week.
Sourdough Discard Crackers
Cook Time: 45 Minutes
Ingredients:
- 100g sourdough starter discard
- 2 tbsp melted butter
- 4 tsp seasonings of choice (we did ½ tsp garlic powder, ½ tsp onion powder, 1.5 tsp thyme, and ½ tsp rosemary)
- Salt
Instructions:
- Preheat your oven to 325°. Combine the starter and melted butter, then add in your seasonings and stir until everything is incorporated.
- Line a baking sheet with parchment paper. Pour the mixture onto the baking sheet and spread into an even layer. Sprinkle with salt.
- Bake for 10 min, then remove from the oven and score with a sharp knife. Return to the oven for 25 min. If the aren’t crispy, continue baking for 5 min at a time. Let cool before serving.
Seasoning ideas:
- 3 tsp cheese powder and 1 tsp freshly cracked black pepper
- 3.5 tsp ranch powder and ½ tsp red pepper flakes
- 1 tsp garlic powder, 1 tsp onion powder, 2 tsp smoked paprika
- 2 tsp cheese powder and 2 tsp rosemary
Cheddar Crackers
Cook Time: 25 Minutes
Ingredients:
- 2 cups cheddar cheese, shredded (from a block, not pre-shredded)
- 1 ½ cups flour
- 8 tbsp unsalted butter, softened
- ½ tsp salt
- ¼ tsp garlic powder
- ¼ tsp paprika
- sesame seeds for coating
Instructions:
- Combine the flour, salt, garlic powder, paprika, and butter in a bowl. Mix with your hands until everything is incorporated, then add the shredded cheese and mix once more, kneading until the dough comes together and forms a ball with pieces of cheese throughout.
- Roll the dough into a log about 1.5 inches thick. Coat the dough in sesame seeds. Cover in plastic wrap and freeze for 30 min.
- Preheat your oven to 400°. Cut the dough into slices about ¼ inch thick, and place on a parchment lined baking sheet. Bake for 10 minutes or until the edges are golden. Cool completely before serving. They will crisp up as they cool.
Date Balls
Cook Time: 45 Minutes
Ingredients:
- 1 (8 oz) package pitted dates, chopped
- ¾ cup white sugar
- ½ cup butter
- 3 cups crispy rice cereal
- 1 cup chopped pecans
- 1 tsp vanilla extract
- ½ cup powdered sugar
Instructions:
- Add chopped dates, sugar, and butter to a saucepan over medium low heat. Cook and stir until the sugar dissolves and the mixture combines and thickens. Remove from heat and fold in the crispy rice cereal, pecans, and vanilla extract until well combined.
- Let the mixture cool for 10-15 minutes. Roll date mixture into 1-inch balls and let cool.
- Put the powdered sugar into a shallow dish and roll the date balls in it to coat.
Four Ingredient Bread
Cook Time: 2.5 Hours
Ingredients:
- 1.5 cups warm water
- 2 tsp dry active yeast
- 2.5 cups flour
- 2 tsp salt
Instructions:
- Pour the water in a large bowl, then add the yeast. Give it a stir, then add the flour and salt. Stir until the mixture is well combined, becoming a sticky dough.
- Cover and let rest for 1-2 hours.
- Uncover and punch the air out of the dough. Flour your workspace, and place the dough into the surface.
- Knead the dough, adding about ½ cup of flour as you knead. Form the dough into a loaf, and place it into a parchment-lined loaf pan. Score the top.
- Bake at 400° for 25 minutes and 375° for another 20 minutes.
Stanley Tucci’s Grilled Cheese
Cook Time: 15 Minutes
Ingredients:
- Bread
- Provolone
- Prosciutto
- Mozzarella
- Basil
- Pesto
- Butter
Instructions:
- Lay out your bread slices and add a thin layer of provolone. Next add prosciutto, then sliced mozzarella. Add some fresh basil leaves, then smear pesto on the top slice.
- Heat butter in a pan over medium. When melted, add your sandwich and cover to help the cheese melt.
- Cook 3-4 minutes per side, or until cheese is melted and bread is browned and crispy.
Nutty Chocolate Oatmeal
Cook Time: 10 Minutes
Ingredients:
- ½ cup rolled oats
- 4 tsp cocoa powder
- 1 Tbsp honey
- 1 ¼ cup milk
- Pinch of salt
- 1 Tbsp peanut butter
- 2 Tbsp almonds
Instructions:
- Add oats, cocoa powder, honey, milk and salt to a pot over medium heat.
- Bring to a simmer, and cook while stirring until oats are thickened, about 5 minutes.
- Transfer the oats to a bowl, then add peanut butter and almonds. Enjoy immediately!
Cheddar Apple Grilled Cheese
Cook Time: 10 Minutes
Ingredients:
- 2 slices of bread
- About ½ cup white cheddar, shredded
- ½ apple, sliced
- 1 Tbsp mayo
- 1 Tbsp dijon mustard
Instructions:
- Divide the white cheddar equally on each slice of bread. Top one half of the bread with apple slices. Sandwich the pieces together, then spread ½ tbsp mayo on the top half of the bread.
- In a pan over medium heat, put the sandwich mayo side down. Spread the other ½ tbsp of mayo on the slice of bread facing up. After a few minutes, flip the sandwich. It should be golden brown.
- Once both sides are golden, remove from the pan. Slice, and serve with dijon mustard for dipping.
TikTok Ramen
Cook Time: 12 Minutes
Ingredients:
- 1 package instant ramen
- 1 Tbsp butter
- 1 tsp minced garlic
- ¼ tsp red pepper flakes
- 1 tsp brown sugar
- 1 Tbsp soy sauce
- 1 egg lightly beaten
- 1 tsp everything bagel seasoning
Instructions:
- Open the ramen and set the seasoning aside. Cook the ramen according to the instructions on the package, then drain the water and set the noodles aside.
- Add the butter to a pan over medium heat. Stir in the garlic and red pepper flakes. When the garlic has softened, stir in the brown sugar and soy sauce.
- Add the noodles to the sauce, and toss to coat. Push the noodles to one side of the pan, and add the egg. Scramble until set.
- Plate, and top with everything bagel seasoning.
Chocolate Chip Mug Cookie
Cook Time: 5 Minutes
Ingredients:
- 1 Tbsp unsalted butter
- 1 Tbsp granulated sugar
- 1 Tbsp brown sugar, firmly packed
- ½ tsp vanilla extract
- pinch salt
- 1 egg yolk
- 3 Tbsp all-purpose flour
- 1-2 tbsp chocolate chips
Instructions:
- Microwave the butter in a mug until melted, about 30 seconds. With a spoon, mix in both sugars, vanilla extract, and salt until combined.
- Stir in the egg yolk until well-combined. Mix in flour, then fold in chocolate chips.
- Microwave on high for 40 – 50 seconds. Serve warm. Add a scoop of ice cream if you’d like!
