Acorn Squash Galette
Earthy roasted acorn squash and savory cheese wrapped in a crispy crust for a delightful snack.
Ingredients
- Pre-made pie dough
- ½ cup goat cheese
- ¼ cup pesto
- ½ sweet onion
- 1 acorn squash
- ¼ teaspoon cayenne
- ¼ teaspoon garlic powder
- ½ teaspoon thyme
- Salt to taste
- Olive oil
Directions
- Preheat the oven to 450º F.
- Prepare the acorn squash: cut in half and remove the seeds. Then, cut the squash into ¼ inch slices.
- Place the sliced squash on a baking sheet and drizzle with olive oil. Sprinkle the salt, cayenne, garlic powder, and thyme over the squash and toss to coat.
- Place the pan into the oven to bake for 25 minutes.
- Meanwhile, slice the onion and sauté over medium heat until browned.
- Combine the goat cheese and pesto in a small bowl
- While the squash is baking, cut your onion into thin slices. Add olive oil to a pan over medium heat, then add your onions and saute until browned.
- In a small bowl, add your goat cheese and pesto and set aside.
- On a separate baking sheet, roll out the pie dough and spoon the goat cheese mixture on top. Spread the mixture in an even layer across the dough, leaving a small border along the edges.
- Layer the onions over the goat cheese, as well as the squash. Fold the edges in and place in the oven to bake for 25 minutes.
- Once the crust begins to brown, remove it from the oven and let cool for a few minutes before serving. Enjoy!

Lemon Ricotta Pasta
A creamy, zesty weeknight pasta with fresh lemon, sharp ricotta, and a sprinkle of parmesan. Ingredients
- 1 pound of Gemelli or other short pasta
- About 4 quarts of water
- 1 cup ricotta cheese
- 1 lemon (2 Tablespoons lemon juice and 2 teaspoons lemon zest)
- ¾ cup parmesan cheese, grated
- 2-3 cloves of garlic, grated
- ½ teaspoon red pepper flakes
- 1 cup reserved pasta water
- Salt and pepper to taste
Directions
- In a large pot, bring the water and a pinch of salt to a boil and add the pasta. Cook until al dente, drain and set the noodles aside. Reserve 1 cup of pasta water for later use and do not rinse the pasta.
- Place the ricotta, lemon zest and juice, parmesan, garlic, and seasonings in the pot and stir to combine.
- Pour the pasta back into the pot and mix it into the sauce. Use the reserved pasta water to thin the consistency of the sauce to your liking.
- Garnish with fresh parsley or chives and enjoy!

Parmesan Potatoes
You don’t want to miss out on these flavor-packed potato bites!
Ingredients
- Small potatoes
- ¼ cup parmesan cheese, grated
- ¼ cup butter
- ¼ teaspoon garlic powder
- Salt and pepper to taste
Directions
- Preheat the oven to 415° F and place a baking dish with butter inside the oven to melt.
- Cut the potatoes into halves before scoring the insides lightly into a grid.
- Once the butter is melted, add the parmesan cheese garlic powder, salt, and pepper to the baking dish. Stir to mix.
- Place the potatoes in the baking dish with the scored side down and spoon some of the melted butter and spices to coat the top of the potatoes.
- Bake the potatoes in the oven for 20 to 25 minutes or until the parmesan begins to brown.
- Serve warm and enjoy!

Cheddar Apple Grilled Cheese
Upgrade your grilled cheese game with this appetizing addition of apples!
Ingredients
- 2 slices of bread of choice
- About ½ cup white cheddar, shredded
- ½ apple, sliced
- 1 Tablespoon of mayonnaise
- 1 Tablespoon dijon mustard
Directions
- Divide the white cheddar equally on each slice of bread. Top half of the bread with apple slices. Sandwich the pieces together, then spread ½ Tablespoon of mayonnaise on the top half of the bread.
- In a pan over medium heat, put the sandwich mayonnaise-side down. Spread the other ½ Tablespoon of mayonnaise on the slice of bread facing up. After a few minutes, flip the sandwich. It should be golden brown.
- Once both sides are golden, remove it from the pan. Slice, and serve with dijon mustard for dipping.

Honey Roasted Figs
A simple and decadent dish worth sharing.
Ingredients
Directions
- Slice figs in half and lay them in a baking dish, cut side up.
- Drizzle honey over the figs. Then, broil them for 5-7 minutes (on medium).
- Remove the figs from the oven and serve as is or over yogurt or overnight oats.

Peanut Butter Cookies
These peanut butter cookies are the perfect cure for sugar cravings and only require 3 ingredients!
Ingredients
- 1 cup creamy peanut butter
- ¾ cup sugar
- 1 large egg
Directions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine peanut butter, sugar, and an egg until creamy.
- Use a spoon to portion out dollops of the dough, and roll them into small dough balls with clean hands.
- Score a cross-hatch into each dough ball by pressing with a fork.
- Place the baking sheet in the oven to cook for 10-12 minutes.
- Let cool and enjoy!

Feta Pasta
If you have not yet tried this viral pasta hack, it’s about time you do!
Ingredients
- ¼ cup feta cheese, whole
- 2 cups of cherry tomatoes
- ½- ¾ cup olive oil
- 16 oz pasta
- 2 teaspoons garlic
- Salt and pepper to taste
Directions
- Preheat the oven to 400° F.
- In a 9×13-inch baking dish, add the tomatoes and feta cheese. Place the block of feta in the center of the dish with tomatoes arranged around it.
- Drizzle the tomatoes and cheese with olive oil, garlic, and any other desired seasonings.
- Place the baking dish in the oven to cook for 30 minutes.
- Meanwhile, prepare the pasta according to the package instructions.
- Drizzle with olive oil and seasonings.
- Remove the toasted cheese and tomatoes from the oven and pour in the cooked pasta. Stir to combine.
- Garnish with fresh basil and enjoy!

Grilled Corn Salad
A vegetarian-friendly salad that’s filling and flavorful? Yes, please!
Ingredients
- 4 ears of corn, grilled
- 2 Tablespoons chives, minced
- 1 cup cherry tomatoes, halved
- ½ cup feta, crumbled
- Juice of 1 lime
- 1 Tablespoon olive oil
- Salt and pepper to taste
Directions
- Prepare the corn over the grill or by oven roasting. Once charred, allow the corn to cool before handling.
- Cut the kernels from the cob and place them into a large mixing bowl. Add the tomatoes, chives, feta, and seasonings, and stir to combine.
- In a separate bowl, make the dressing by mixing the lime juice and olive oil. Once combined, transfer to the salad bowl and toss to coat.
- Place in the refrigerator until ready to serve. Enjoy!

Rosemary & Grape Focaccia
Light and airy focaccia bread with a touch of earthy aroma and sweetness.
Ingredients
- Pre-made pizza dough
- Red grapes
- Fresh Rosemary
- Olive oil
- Salt to taste
Directions
- Preheat the oven to 375° F and oil a sheet pan.
- Stretch the dough across the sheet pan, coating it in oil. Flip the dough to coat the underside as well.
- Use clean fingertips to dimple the dough and arrange grapes across the entire pan. Gently press grapes into the dough.
- Sprinkle the rosemary leaves on top of the dough, also gently pressing to set, and top with a pinch of salt.
- Bake the focaccia bread for 25 to 30 minutes or until the crust begins to golden.
- Enjoy!

Cheesy Pickle Spears
Get your fix of crispy, cheesy, and tangy in a single snack!
Ingredients
- Dill pickle spears
- Havarti cheese slices
- Egg roll wrappers
- Ranch
- Sriracha
Directions
- Lay out an egg roll wrapper. Cut a slice of Havarti cheese in half, and place it in the middle of the egg roll wrapper. Lay a pickle spear on top of the cheese. Roll it up like an egg roll. Once you get to the end, dip your finger in the pickle juice and rub the edge of the egg roll wrapper to help it stick together.
- Preheat your air fryer to 360º F. Cook the spears for 8 to 10 minutes, flipping over halfway through.
- While the spears are in the air fryer, mix ranch and sriracha to taste. Dip the spears into the sriracha, and enjoy!

Cacio e Pepe
Try your hand at this traditional pasta dish that features rich parmesan and freshly cracked black pepper!
Ingredients
- 6 ounces of pasta bucatini or spaghetti
- 3 Tablespoons butter, divided
- 1 teaspoon black pepper, freshly cracked
- 1 cup parmesan cheese, grated
Directions
- Fill a large pot with water and bring it to a steady boil over medium-high heat. Sprinkle salt into the water and add the pasta into the boiling water.
- Allow the pasta to cook until al dente before draining and setting aside. Reserve at least 1 cup of the pasta water for later use.
- In a large skillet, melt 2 Tablespoons of butter over medium heat. Then, add the pepper and cook for around 1 minute or until toasted.
- Slowly pour in some of the reserved pasta water, about ½ cup at first, into the skillet. Bring the water, butter, and pepper to a simmer, and add the cooked pasta and the remaining butter.
- Bring the heat down to low and add the Parmesan, making sure to stir and mix so the pasta is completely covered. If the pasta seems dry, slowly add small amounts of the pasta water to make it creamier.
- Remove the pasta from the skillet, sprinkle with fresh pepper, and enjoy!

White Cheddar Apple Toasts
Simple snacks with sophisticated flavor. Give this recipe a try!
Ingredients
- 1 French baguette
- 1 block white cheddar cheese
- 1-2 apples, red variety
- 1 teaspoon ground cinnamon
- 1-2 Tablespoons butter
Directions
- Preheat the broiler if necessary.
- Slice the baguette into bite-sized crostini and arrange on a baking sheet. Place the bread slices into the oven to broil for 1-2 minutes. Remove the toasts from the oven and set aside.
- Slice the apple and cheese into thin sections. Place a slice of cheese onto each toast.
- Place the baking sheet back into the oven and broil for an additional 1-2 minutes to melt the cheese.
- Melt the butter in a saucepan over medium heat. Add the apple slices and a sprinkle of ground cinnamon to the pan and cook for around 7 minutes to soften the fruit.
- Add the apple slices to the toasts, serve, and enjoy!

- 1 block of feta, whole
- Olive oil
- 2 Tablespoons chili crisp
- ¼ cup honey
Directions
- Preheat the oven to 400º F.
- Place the block of feta in a baking dish and drizzle with olive oil. Cover the feta with chili crisp.
- Bake the feta for 15 minutes.
- Top the baked feta with honey and place it back in the oven to broil on high for 2 to 3 minutes.
- Remove and allow to cool before serving.

Directions
- Spread a layer of refried beans over a tortilla.
