Strawberry Frozen Yogurt Bites
Cook time: 2 hours 10 min
Ingredients:
1 cup strawberries (diced)
1 cup plain Greek yogurt
2 Tbsp honey
1 cup semi-chocolate chips
1 Tbsp coconut oil
Instructions:
Line a baking sheet with parchment paper.
In a medium bowl, add the strawberries, yogurt, and honey and stir until combined. Dollop ¼ cup clusters in an even layer on the baking sheet. Freeze for 2 hours or until solid.
In a microwave-safe bowl, add the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between until the chocolate is melted.
Dip each yogurt cluster in the melted chocolate, coating both sides. Place the clusters back on the baking sheet. If needed, freeze until solid.
Add cottage cheese, jam, and maple syrup to a blender. Blend for 2-3 minutes, or until completely smooth.
Pour into a container, then add the sliced strawberries and Teddy Grahams. Stir to mix.
Cover, and freeze for 4-5 hours, stirring every hour for the best consistency.
Brownies for Two
Cook time: 25 min
Ingredients:
2 ½ Tbsp unsalted butter
4 Tbsp light brown sugar, packed
1 large egg yolk
¼ tsp vanilla extract
4 Tbsp cocoa powder
1 Tbsp all-purpose flour
¼ tsp salt
1 Tbsp chocolate chips, optional
Instructions:
Preheat oven to 350°F. Grease two standard size muffin cups with cooking spray or line with cupcake liners. Set aside.
In a small microwave-safe bowl, combine the butter and sugar. Microwave for 30 seconds, then remove and stir with a whisk. Repeat if the butter is not full melted.
Add the egg yolk and vanilla extract. Whisk until the mixture lightens in color slightly.
Add in cocoa powder, flour, and salt and use a rubber spatula to fold together until no streaks of flour remain. If using chocolate chips, add the chocolate chips and fold to distribute.
Divide the mixture between your two prepared muffin cups and bake for roughly 18 minutes.
You’ll know they’re done when the edge is set, but a knife inserted into the middle still comes out with a bit of brownie batter on it.
