Write a love letter straight to your tummy with these Strawberry Cookies. Made with freeze-dried strawberries, these cookies are as pretty as they are tasty. The taste is similar to a traditional sugar cookie with a colorful and fruity addition of strawberries. Serve these for a lovely treat perfect for Valentine’s Day or wrap them up and give them as a sweet gift!
To make strawberry cookies, start with freeze-dried strawberries. You’ll also need unsalted butter, granulated sugar, one egg, vanilla and optional red or pink food coloring.
Dry ingredients include all-purpose flour, sugar for baking and rolling, baking soda and salt. All ingredients are readily available at conventional grocery stores.
The full recipe is below, but here’s a brief process outline:
Cook time: 30 min
Preheat oven to 350ºF.
Place freeze-dried strawberries in a food processor or blender and pulse until they’re ground to a fine dust. Reserve 1 Tbsp for rolling the cookies.
Combine butter and sugar in a mixing bowl and beat on medium high until creamed.
Add the strawberry powder (and food coloring if using) and mix on low until fully combined. Add the egg and continue mixing on low until combined.
In a separate bowl, whisk together flour, salt, and baking soda.
With mixer on low, add the flour mixture to the bowl in 3 parts, mixing until fully combined.
Combine the reserved strawberry powder and ¼ cup sugar in a small bowl until well-combined.
Scoop 1 ½ Tbsp of dough and roll between your hands to make a ball.
Roll the dough in the strawberry sugar mixture until it’s fully coated, and place on a parchment lined baking sheet.
Place the dough balls 2 inches apart.
Bake for 11-13 minutes.
