The birds are singing and the days are getting warmer! Well, for the most part, anyway. While Alabama weather always manages to keep us on our toes, spring has officially sprung which means the season can finally start being celebrated!
One of the best characteristics of the spring and summer seasons is the bounty of fresh foods and flowers they bring. Fresh fruits and other produce become much more available with a richness in flavor that cannot be matched at any other time in the year.

This has led us to discover some pretty incredible dishes, some of which can be made with minimal effort in the comfort of your home! This week, we are sharing a recipe for a gourmet snack that is an ideal way to take advantage of spring’s bounty, impress friends and clients, and expand your culinary skill set! These strawberry pistachio crostini are a seamless blend of creamy, crunchy, sweet, savory, and most of all, delicious!
With only six ingredients and a few minutes to spare, you can enjoy these delicate treats without breaking a sweat! Here’s how:
Before you start cooking or preparing any recipe, it is always good practice to gather all of the ingredients you’ll need and even prep some of them, too.
For this recipe, you’ll need a baguette, some fresh strawberries, shelled pistachios, some cream cheese, honey, and olive oil. Through some experimentation, we have found that using a flavored honey adds a unique dimension to this recipe, so we recommend a spicy honey like Bee’s Knees Spicy Honey. The spice surprisingly compliments the tangy flavor of the sliced strawberry and the earthy notes of pistachio without contrasting the smooth cream cheese. However, traditional honey works magically with the recipe, as well, so go with whatever suits your taste buds!
Now that you’ve got all of your ingredients at the ready, begin preparing them for the dish. Slice the strawberries (and discard the leaves) and chop the pistachios as best you can.
Set the pistachios and sliced strawberry aside to get the crostini ready for dressing. For more angular and gourmet-inspired crostini, slice the baguette at a slight angle. The thickness of the slices are up to you, but we recommend about ¾-1 inch each. Drizzle some olive oil on the slices and place in the oven to broil on high. It should only take a few minutes before they begin to brown, so be sure to pay close attention while they are in the oven.
After the bread has been toasted, the crostini are ready to be dressed! Spread a dollop of cream cheese on each slice and place the strawberry slices. Sprinkle the pistachio bits and drizzle each crostini with honey.
These are best when served immediately, but luckily they are easy and quick to prepare just before an event!
